Mini Christmas quick bread

An easy nut free bread to make with all the flavours of Christmas to satisfy your cravings without the months of work for a Christmas cake.

Ingredients
  

  • 50 g plain flour
  • 50 g wholemeal flour
  • 10 g unsalted butter
  • 1/2 tsp all spice
  • 1/2 tsp bicarbonate of soda
  • 1/2 tsp cinnamon
  • 2 cm fresh ginger
  • 15 g brown sugar
  • 1 tsp lemon juice
  • 1 lemon zest
  • 1/4 tsp salt
  • 25 g dark chocolate chips
  • 25 g dried mixed fruit cranberry, raisin, currants
  • 10 g flaxseeds
  • 5 g chia seeds
  • 60 ml milk

Instructions
 

  • Preheat the oven to 170°C fan.
  • Sift the plain and the wholemeal flour together into a bowl.
  • Rub in the butter.
  • Add the rest of the dry ingredients: Sugar, salt, all (mixed) spice, cinnamon, bicarbonate of soda. Mix well.
  • Peel the fresh ginger and grate into the mixture.
  • Zest the lemon into the mixture.
  • Cut the lemon into halves, squeeze 1/2 of the lemon into the milk. Stir the milk thoroughly. Set aside.
  • Add mixed dried fruit and seeds. Stir the mixture to all the fruit and seeds are incorporated.
  • Make a well in the mixture, then add 3/4 of the milk. Use your hand to make a dough ball. If the mixture is too dry then add the remaining milk.
  • Dust the counter with flour.
  • Place the dough onto the counter and form shape into a round disc..
  • Dust the baking tray with flour. Place the dough into the centre of the baking tray.
  • Use a wooden spoon handle to divide the dough into four equal parts. Do this by pressing the handle to make a cross in the centre of the dough.
  • Dust the top of the loaf with flour.
  • Place the dough into the oven full on the middle shelf, bake for 20 minutes. The base of the bread will sound hollow when knock it, this will indicate that the brand is called
