Ingredients
  

  • 225 g strong white bread flour plus extra for dusting
  • 7 g sachet fast-action dried yeast
  • 2 minced garlic cloves
  • 20 g butter
  • 5 g salt
  • 115 ml warm water
  • 1 tbsp Vegetable oil or spray oil for oiling the bowl only.
  • 2 tbsp extra virgin olive oil for brushing onto the breadsticks.
  • 2 tbsp sea salt
  • 2 tbsp freshly ground black pepper

Instructions
 

  • Peel, Dice, and Mince Garlic: Start by peeling the garlic cloves. Dice them finely, then use a pinch of the salt to help mince the garlic into a paste. This will enhance the flavor of the breadsticks.
  • Melt the Butter: Place the butter in a microwave-safe bowl. Heat it in the microwave for 20-30 seconds, or until fully melted. Keep an eye on it to prevent overheating.
  • Prepare the Dough: In a large mixing bowl, combine the flour, dried yeast, and the remaining salt. Make a well in the center and add the warm water, minced garlic paste, and melted butter. Mix until a soft dough forms.
  • Knead the Dough: Knead on a floured surface for about 7 minutes until smooth.
  • Brush a large bowl with oil. Shape dough into a ball.
  • First Proofing: Let the dough rise in a warm place, covered, for 1 hour or until doubled in size.
  • Knock Back and Shape: Gently punch the dough down to remove air bubbles.
  • Weigh the dough, divide it into 6 equal pieces, shape each into a ball, and bench rest covered for 5 minutes.
  • Sprinkle flour over your baking tray.
  • Roll each ball into a sausage shape by rolling and stretching.
  • Place the breadsticks on the floured baking tray. cover with clingfilm and let rise for another 45 minutes.
  • Preheat Oven and Prepare for Baking: Preheat your oven to 200°C (400°F).
  • Remove the cling film.
  • Brush the breadsticks with olive oil, sprinkle with sea salt and your choice of seeds.
  • Bake: bake until golden brown and crispy. Around 15 - 30 mins.
  • Mince the garlic and mix with soften butter.(10 secs in the microwave)
  • Allow your bread stick to cool slightly, slice in half. spread the garlic butter in the centre of the bread.
  • Wrap in tin foil and pale in the oven to warm through for 8 - 10 mins.
  • open and serve

  4. Proofing Environment: For the dough to rise properly, it needs a warm, draft-free environment. If your kitchen is cool, you can turn your oven on to its lowest setting for a few minutes, then turn it off and place the dough inside to rise.
