Equipment

  • Silicone mould (for ganache) small buttons/ circles
  • 2 Ramekins
  • Bain marie (double boiler) saucepan and large bowl
  • Whisk
  • Sieve
  • Spatula
  • Freezer

Ingredients
  

  • 50 g dark chocolate
  • 50 g butter
  • 10 g melted butter for greasing the ramekins
  • 50 g high-protein flour
  • 50 g cocoa powder
  • 15 g cocoa powder extra - including 1 tbsp for dusting the ramekins
  • 2 eggs separated 1 egg and 1 yolk
  • 50 g caster sugar
  • 75 g dark chocolate
  • 30 ml heavy cream
  • 1/4 tsp optional Flavorings 1/4 tsorange extract, mint extract, coffee extract

Instructions
 

  • Preheat the oven to 180°C (350°F).
  • The day before - make the ganache for the centre so it has time to set
  • Make the ganache by melting 75g of dark chocolate in a bain marie. Once melted, remove it from the heat and stir in the heavy cream. Add any desired flavorings, such as orange extract, mint extract, or coffee extract. Pour the ganache into a silicone mould and freeze it overnight.
  • Brush melted butter into the ramekins, making sure to coat the bottom and sides of each ramekin. Dust the ramekins with cocoa powder, shaking off any excess. Place the buttered and cocoa-dusted ramekins in the freezer until set - 10 mins
  • In a bain marie, melt 50g of dark chocolate and 50g of butter together. Stir until smooth and well combined. Remove from heat and set aside.
  • In a separate bowl, whisk together the egg, egg yolk, and caster sugar until well combined.
  • Sift the high-protein flour and cocoa powder into the egg mixture. Gently fold the dry ingredients into the wet ingredients using a spatula until just combined. Be careful not to overmix.
  • Remove the ramekins from the freezer. Divide the chocolate batter equally among the ramekins, filling them about halfway.
  • Place one frozen ganache piece in the center of each pudding, pressing it gently into the batter.
  • Bake the chocolate fondant pots in the preheated oven for 12-15 minutes on the middle shelf. The edges should be set, but the center should still be slightly wobbly.
  • Remove the ramekins from the oven and let them cool for a minute or two. Carefully turn out the chocolate fondant pots onto individual plates.
  • Serve the chocolate fondant pots immediately with cream, fruit, or ice cream.

  • 1 Baking Tray

Ingredients
  

  • 225 g strong white bread flour plus extra for dusting
  • 7 g sachet fast-action dried yeast
  • 2 minced garlic cloves
  • 20 g butter
  • 5 g salt
  • 115 ml warm water
  • 1 tbsp Vegetable oil or spray oil for oiling the bowl only.
  • 2 tbsp extra virgin olive oil for brushing onto the breadsticks.
  • 2 tbsp sea salt
  • 2 tbsp freshly ground black pepper

Instructions
 

  • Peel, Dice, and Mince Garlic: Start by peeling the garlic cloves. Dice them finely, then use a pinch of the salt to help mince the garlic into a paste. This will enhance the flavor of the breadsticks.
  • Melt the Butter: Place the butter in a microwave-safe bowl. Heat it in the microwave for 20-30 seconds, or until fully melted. Keep an eye on it to prevent overheating.
  • Prepare the Dough: In a large mixing bowl, combine the flour, dried yeast, and the remaining salt. Make a well in the center and add the warm water, minced garlic paste, and melted butter. Mix until a soft dough forms.
  • Knead the Dough: Knead on a floured surface for about 7 minutes until smooth.
  • Brush a large bowl with oil. Shape dough into a ball.
  • First Proofing: Let the dough rise in a warm place, covered, for 1 hour or until doubled in size.
  • Knock Back and Shape: Gently punch the dough down to remove air bubbles.
  • Weigh the dough, divide it into 6 equal pieces, shape each into a ball, and bench rest covered for 5 minutes.
  • Sprinkle flour over your baking tray.
  • Roll each ball into a sausage shape by rolling and stretching.
  • Place the breadsticks on the floured baking tray. cover with clingfilm and let rise for another 45 minutes.
  • Preheat Oven and Prepare for Baking: Preheat your oven to 200°C (400°F).
  • Remove the cling film.
  • Brush the breadsticks with olive oil, sprinkle with sea salt and your choice of seeds.
  • Bake: bake until golden brown and crispy. Around 15 - 30 mins.
  • Mince the garlic and mix with soften butter.(10 secs in the microwave)
  • Allow your bread stick to cool slightly, slice in half. spread the garlic butter in the centre of the bread.
  • Wrap in tin foil and pale in the oven to warm through for 8 - 10 mins.
  • open and serve

Notes

  1. Garlic Preparation: Taking the time to peel, dice, and then mince the garlic with salt not only enhances its flavor but also ensures a uniform distribution throughout the breadsticks. The salt helps to break down the garlic, releasing its aromatic oils.
  2. Butter Melting Tip: When melting the butter in the microwave, use a microwave-safe bowl and cover it with a microwave-safe lid or paper towel to prevent splattering. Watch closely to avoid overheating, as butter can go from melted to burnt quickly in a microwave.
  3. Dough Hydration: If the dough feels too dry after combining all the ingredients, add a little more warm water, one tablespoon at a time, until it reaches a soft, pliable consistency. The exact amount of water needed can vary depending on factors like the flour type and humidity.
  4. Proofing Environment: For the dough to rise properly, it needs a warm, draft-free environment. If your kitchen is cool, you can turn your oven on to its lowest setting for a few minutes, then turn it off and place the dough inside to rise.
  5. Rolling Breadsticks: When shaping the dough into breadsticks, try to roll them evenly to ensure they bake uniformly. Uneven breadsticks may result in some being overbaked while others are underbaked.
  6. Baking Tray Preparation: Dusting the baking tray with flour or lining it with parchment paper prevents the breadsticks from sticking and makes for easier cleanup.

  • A handful of snipped chives
  • A little lemon juice
  • Fresh ground pepper to taste

Instructions
 

  • Preheat your oven to 190°C (375°F).

Make the wedges

  • Wash and peel your potatoes.
  • Cut potatoes into wedges.
  • Toss the potato wedges with olive oil and spices until evenly coated.
  • Spread the wedges on a baking sheet and bake for 20 - 30 minutes, until golden brown.

Make the dip

  • Mix the cheese, mayo and yoghurt in a bowl until smooth and creamy.
  • Use scissors to snip the chives. Add to the dip.
  • Peel, dice & Mince the garlic.
  • Squeeze in lemon juice to taste.
  • Season with salt and pepper
  • Serve the wedges with the garlic dip on the side

Notes

Adjust the spiciness to taste.
The dip can be refrigerated beforehand to enhance flavours.
