Preheat the oven to 170°C fan.
Sift the plain and the wholemeal flour together into a bowl.
Rub in the butter.
Add the rest of the dry ingredients: Sugar, salt, all (mixed) spice, cinnamon, bicarbonate of soda. Mix well.
Peel the fresh ginger and grate into the mixture.
Zest the lemon into the mixture.
Cut the lemon into halves, squeeze 1/2 of the lemon into the milk. Stir the milk thoroughly. Set aside.
Add mixed dried fruit and seeds. Stir the mixture to all the fruit and seeds are incorporated.
Make a well in the mixture, then add 3/4 of the milk. Use your hand to make a dough ball. If the mixture is too dry then add the remaining milk.
Dust the counter with flour.
Place the dough onto the counter and form shape into a round disc..
Dust the baking tray with flour. Place the dough into the centre of the baking tray.
Use a wooden spoon handle to divide the dough into four equal parts. Do this by pressing the handle to make a cross in the centre of the dough.
Dust the top of the loaf with flour.
