Equipment

  • 2 ramekin dishes
  • 1 Wooden spoon
  • 1 Medium Bowl
  • 1 Large bowl
  • 1 Vegetable peeler
  • 1 Small bowl
  • 1 Sieve
  • 1 Baking Tray
  • 1 Measuring spoons
  • 1 Lemon juicer

Ingredients
  

  • For the Apple Base:
  • 2 green apples peeled, cored, and sliced
  • 25 g brown sugar
  • 4 g cinnamon optional
  • 1 lemon juiced
  • For the Sponge:
  • 50 g caster sugar
  • 50 g self raising flour
  • 50 g unsalted butter, softened
  • 1 large egg
  • 5 ml vanilla extract
  • 2 g baking powder
  • A pinch of salt

Instructions
 

  • Preheat your oven to 180°C (350°F) to ensure it's at the right temperature for baking.
  • Prepare the Ramekins:
  • Lightly grease the inside of each ramekin with butter to ensure the puddings can be easily removed after baking.
  • Prepare the Apples:
  • Peel and core the apples.
  • Slice the apples thinly.
  • Toss the sliced apples with lemon juice, sugar and cinnamon (if using) in a bowl.
  • Divide the apples equally and arrange them at the bottom of each greased ramekin.
  • Make the Sponge:
  • In a mixing bowl, cream together the butter and sugar until light and fluffy. Beat in the egg and vanilla extract. Gradually sift in the flour, baking powder, and salt, folding until just combined.
  • Divide the sponge mixture over the apples in each ramekin, smoothing the tops with a spoon.
  • Bake:
  • Place the ramekins on a baking sheet and bake in the preheated oven for 25 minutes, or until the sponge is golden and a skewer inserted into the center comes out clean.
  • Serve:
  • Allow the puddings to cool for a few minutes before serving directly from the ramekins.
  • Serve with custard sauce.

Notes

  • Choosing apples with a good balance of tartness and sweetness will enhance the flavor of your dessert.
  • These puddings can be made ahead of time and reheated before serving if desired.
