For the wedges
- 2 large potatoes
- 15 ml olive oil
- 5 g harissa spice
- 5 g all-purpose seasoning
- 5 g cumin
- 5 g turmeric
- For the Fresh Garlic Dip:
- 1-2 garlic cloves finely minced
- 50 g light soft cheese e.g., Emborg
- 15 g mayonnaise
- 25 g Greek yogurt
- A handful of snipped chives
- A little lemon juice
- Fresh ground pepper to taste
Make the wedges
Wash and peel your potatoes.
Cut potatoes into wedges.
Toss the potato wedges with olive oil and spices until evenly coated.
Spread the wedges on a baking sheet and bake for 20 - 30 minutes, until golden brown.
Make the dip
Mix the cheese, mayo and yoghurt in a bowl until smooth and creamy.
Use scissors to snip the chives. Add to the dip.
Peel, dice & Mince the garlic.
Squeeze in lemon juice to taste.
Season with salt and pepper
Serve the wedges with the garlic dip on the side
Adjust the spiciness to taste.
The dip can be refrigerated beforehand to enhance flavours.
