  • 3 bowls

Ingredients
  

  • 3 eggs
  • 60 g orange breadcrumbs
  • 100 g chicken mincemeat
  • 1 tsp of curry powder
  • Extra flour for coating
  • tin Chickpeas
  • ½ Carrot
  • 2 litres oil for the deep fat fryer

Instructions
 

  • Defrost the chicken mince in the freezer over night.
  • Preheat the deep fat fryer to 180°C (350°F).
  • Soft-boil the eggs by bringing a pot of water to a boil. Gently lower the eggs into the boiling water and cook them for 6 minutes.
  • Then, remove the eggs from the boiling water and immediately transfer them to a bowl of ice water to stop the cooking process. Once cooled, carefully peel the eggs and set them aside.
  • Mash the chickpeas in a bowl.
  • Peel and grate the carrot, add to the chickpeas.
  • Add to the defrosted chicken mince. This will give a firmer texture to the very soft chicken mince.
  • Add the curry powder and salt and pepper to season.
  • Mix thoroughly together
  • Check the meat by either shallow frying a very small portion or cooking it in the microwave.
  • Take a portion of the seasoned mincemeat and flatten it out on a clean surface. Place a soft-boiled egg in the center of the flattened mincemeat.
  • Carefully shape the mincemeat around the egg, ensuring it is evenly covered. Mold it into a round ball shape. Repeat the process with the second egg.
  • Prepare three separate bowls for coating the scotch eggs. In the first bowl, place the seasoned flour. In the second bowl, add beaten egg. In the third bowl, place breadcrumbs.
  • FLOUR: Roll each mincemeat-coated egg in flour, making sure it is evenly coated.
  • EGG: Then, dip it into the beaten egg, allowing any excess to drip off.
  • BREADCRUMBS: Finally, roll it in breadcrumbs, ensuring it is thoroughly coated.
  • You can now chill these in the fridge to help them firm up or until you are ready to cook them.
  • Carefully lower the coated scotch eggs into the preheated deep fat fryer. Deep fry them until they turn golden brown and crispy. This typically takes about 5-6 minutes.
  • Once cooked, use a slotted spoon or spider to carefully remove the scotch eggs from the fryer. Place them on a paper towel-lined plate to drain any excess oil.
  • Allow the scotch eggs to cool slightly before serving.
  • Serving suggestion:
  • Serve the scotch eggs with a side salad and dressing, or with wedges and veggies for a more substantial meal. They can also be enjoyed as picnic snacks or on-the-go treats. Enjoy!

  • 225 g self-raising flour plus extra for dusting
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • Pinch of smoked paprika/garlic powder/celery salt
  • 60 g butter cold and cubed
  • 30 g Parmesan cheese grated
  • 60 g cheddar cheese grated
  • 6 g chopped chives
  • 2 sprigs of flat-leaf parsley finely chopped
  • 80 ml milk
  • 1 egg

Instructions
 

  • Preheat your oven to 180°C (350°F) and prepare a baking tray by lining it with parchment paper.
  • In a mixing bowl, sift the self-raising flour. Then using your fingertips, rub the diced cold butter into the flour until it resembles fine breadcrumbs. This step ensures that the butter is evenly distributed and helps to create a light and flaky texture in your scones.
  • Add the grated cheddar cheeses and spices. Mix everything together until well combined.
  • Finely dice the chives and parsley and add to the scone mix.
  • Season with salt and pepper.
  • In a separate bowl, whisk together the milk, vanilla and egg until well combined.
  • Make a well in the center of the dry ingredients mixture and pour in the milk and egg mixture. Use a knife and washing machine technique to gently mix the ingredients together until they come together to form a soft dough.
  • Be careful not to overmix, as this can lead to tough scones.
  • Turn the dough out onto a lightly floured surface and gently knead it a few times until it comes together. Pat the dough into a circle about 2cm thick.
  • The height of the dough needs to be just above the middle of the cutter.
  • Use a medium cutter to cut out scones from the dough. Avoid twisting the cutter, as this can affect the rise of the scones. Instead, press straight down and lift the cutter up.
  • Place the scones onto the prepared baking tray, leaving a little space between each one.
  • Brush the tops of the scones with a little milk or beaten egg for a golden finish.
  • Bake the scones in the preheated oven on the middle shelf for 20-25 minutes, or until they are risen and golden brown.
  • Once baked, transfer the scones to a wire rack to cool slightly before serving.
  • Serve the scones warm with butter, cold cuts and pickles. Enjoy your delicious homemade scones as a delightful treat!

Ingredients
  

  • 2 slices thick bread stale bread and crusts removed.
  • 30 grams unsalted butter room temperature
  • 30 grams dried cranberries
  • 1 egg
  • 1 egg yolk
  • 200 ml whole milk
  • 20 grams caster sugar
  • 5 ml vanilla essence
  • Powdered sugar for dusting

Chocolate Sauce:

  • 150 grams milk chocolate chopped
  • 25 grams butter
  • 125 ml double cream
  • 15 grams caster sugar
  • 15 ml coconut oil

Instructions
 

  • Preheat your oven to 180°C.
  • Grease two ramekins with a bit of the butter.
  • Spread butter on both sides of each bread slice.
  • Cut the bread into cubes.
  • Arrange the layers of bread, buttered side up, in the bottom of each ramekin, sprinkling with cranberries as you go.
  • Fill up with layers of bread and dried fruit and set aside.
  • Make custard
  • Separate 1 of your eggs.
  • In a bowl, whisk together the egg and egg yolk, milk, sugar, vanilla essence until well combined.
  • Evenly pour the egg mixture over the bread in the ramekins, allowing the bread to soak up the liquid for a few minutes.
  • Add a thin layer of water to your roasting tray.
  • Bake on a MIDDLE SHELF tray in the preheated oven for 25-30 minutes, or until the tops are golden and the custard has set.

Make the chocolate sauce:

  • Add 300 ml water to a saucepan.
  • Heat on No 5 until simmering.
  • Add the chocolate, coconut oil and butter to the bowl.
  • Place the bowl on top of the pan of simmering water (Bain Marie), ensuring the water does not touch the bottom of the bowl.
  • Do not stir until the chocolate has melted.
  • Add the cream and sugar and gently stir until the mixture is smooth and glossy.
  • Remove from the heat and add to a jug.
  • Serve: Drizzle the warm chocolate sauce over the bread and butter pudding.

Notes

  • For a creamier texture, substitute half the milk with cream.
  • Enhance the flavor with a splash of rum or brandy in the egg mixture, if desired.
  • Use the whole loaf - unsliced so you can cut it thickly into cubes.
