Ingredients
  

For the Fish

  • 1 tilapia or dory fillet frozen, defrost overnight in the fridge
  • 1 tbsp curry powder
  • 60 g plain yoghurt
  • 75 g cornflakes crushed
  • 35 g plain flour
  • 1 tsp nutritional yeast
  • A pinch of salt
  • A drizzle of oil for baking

For the Tangy Dip

  • 2 tbsp low-fat mayonnaise
  • ½ lemon juiced
  • 3 gherkins finely diced
  • ¼ onion finely diced
  • 1 tsp capers
  • A handful of fresh herbs mint, tarragon, or dill work beautifully

To Serve

  • 2 Burger buns
  • 1 tbsp Butter for toasting
  • 2 pieces of Fresh lettuce
  • 2 Tomato slices

Instructions
 

  • Preheat your oven to 200°C / Gas Mark 5.

Prep the Fish

  • Cut the fish fillet into finger-sized strips (use a blue board if following food safety guidelines).
  • Place the flour, yoghurt, and crushed cornflakes on separate plates.
  • Stir the curry powder into the yoghurt and mix the nutritional yeast with the yoghurt. Stir until completely combined.

Coating the fish:

  • Coat each piece of fish in this order: flour → yoghurt → cornflakes.

Bake Until Crunchy

  • Place the coated fish pieces on a baking tray and brush lightly with oil.
  • Bake on the middle shelf No 2 for 15 minutes, until crisp and golden.

Make the Tangy Dip

  • While the fish bakes, dice the onion and gherkins.
  • Mix them with lemon juice, herbs, mayo, and capers.
  • Taste and adjust seasoning to your liking.

Toast the Buns

  • Warm a griddle pan over medium-high heat.
  • Melt a little butter, brush it onto the buns, and toast until golden.

Assemble Your Burger

  • Spread some sauce onto the base of the bun.
  • Add the crispy fish, lettuce, and tomato.
  • Top with another dollop of sauce and finish with the bun lid.
