Bubble Tea

Fun in a cup. Made with green tea and premade bubbles. It’s really easy to do, just set aside a Sunday afternoon.
Bubble Tea
An iced tea drink with premade tapioca pearls.
Equipment
- Frying Pan
- Kettle
- Large Saucepan
- Measuring Jug
- Medium Saucepan
- Wooden spoon
- Stove
- Teapot
- Teaspoon
- Tea strainer
- Drink cup with lid
- Straw
- Whisk
Ingredients
Bubbles
- 125 g tapioca pearls
- 1 L water
- 50 g gula merah demerara sugar
- 50 ml water
Tea
- 1 tbsp condensed milk per cup or 2 for extra sweet
- 1 L boiling water or enough to fit your teapot
- 2 tbsp loose green tea use your favourite flavour
- 2 tbsp ice
Topping
- 2 tbsp fresh whipped cream per cup
- 1 tsp grated chocolate
Instructions
Tea
- Boil the water in the kettle provided.
- Add the tea into the pot.
- Pour over the boiing water and leave to steep. (2-5 mins)
- Strain the tea as your pour.
- Place the condensed milk into a cup.
- Pour in the tea over the milk ¾ full.
- Put in the fridge to cool overnight. If you have no time you can just add ice to the tea in the cup.
Pearls
- Bring the water to a vigorous boil.
- Add the pearls.
- Put on the lid.
- Cook until soft & gelatinous. Around 30 – 40 mins.
- The water should have reduced to around a ½ of what you began with.
Syrup
- Combine the gula merah and water into a small sauce pan.
- Cook on No5 until sugar has dissolved. DONOT BOIL
Pearls No2
- Add the syrup into the pearls.
- Stir thoroughly.
- Cook for a further 20 – 30 mins while STIRRING CONTINUOUSLY.
- If you dont stir it, the pearls will stick to the pan and BURN.
- STOP COOKING ONCE THE PEARLS ARE JELLY LIKE, most of the liquid should have dissapeared.
- You can check with your teacher if you are unsure of the correct consistency.
- Leave to cool.
- If you are in a hurry you can place the pearls into a bowl. then add ice and salt to a large bowl. Place the bowl with the peals on top of the ice bowl. Leave to cool.
Making your drink
- Stir vigourously until the milk has dissolved.
- Place pearls at the bottom of your drinks cup.
- Add ice.
- Pour over your cooled milk tea.
- Whip cream until soft peaks form.
- Grate chocolate over the top.
- And Enjoy.
